What I do is look for the pinkest (center) part of the rib. the rarer the better.
Tell them to cut a thick piece and put it on the grill in the back. Cook in medium.
Just like off the grill at at home. :D

Honestly one of the worst Prime Ribs in recent memory at Amphora, they had just brought out this new piece and I knew when he cut it I was in trouble. Extra Martian helped ease the pain.

I'm not impress with the chef that has been assign to the Amphora.
The food was not good this weekend. Except for the Split Pea with ham soup. :down:

Great casino. My mood elevates just walking inside. Unfortunately, VP too has declined in quality.

The soup and Shrimp Ceasar salad and Potatoe salad was good.
