It's been a long time since I did much cooking. When I moved to Las Vegas, I started eating the majority of my meals out as they were comped and it was easier and cheaper than shopping and cooking.
Then I lived in an RV more or less full-time with a stove that pretty much sucked. I mostly cooked microwave dinners or ate spaghetti or pizza.
So I was looking forward to having a full kitchen and a dishwasher.
Being a good distance from the closest supermarket, I subscribed to Butcher Box, a home delivery service that supplies me superior meats at reasonable prices.
I'm learning to use my Ninja grill and just got a combination air fryer/steamer that seems to be amazing.
Last night I made a cheese-stuffed meatball recipe I hadn't cooked in a decade and while I was missing a spice or two, I put some of them on toasted Kings Hawaiian Sweet Rolls and the results were fantastic.
I'm marinating two chicken breasts for tomorrow's fajitas, with garlic parmesan fries.

We use our air fryer for maybe 75% of our meals. Wouldn't be without it.

My sister just got one. I am actually on the list to get a free one soon from Mohegan Sun. Glad you guys like them. Looking forward to picking it up and using it.

Love those garlic parm fries. I try and not eat too many, but they are addictive!!! I make garlic parm tater tots. Yum! Many times I will use Romano cheese instead of parm. If you do, lose the salt shaker. You won’t need it with the Romano cheese. Just a little history. Romano cheese actually goes back to the first century BC. Another awesome and very inexpensive dish is barbecue boneless pork ribs made in the slow cooker. I could go for some right now. Be firing up the gas grill this week. First on the list will be some boneless chicken breasts. I know this sounds horrible, but t makes an awesome coating for the chicken on the grill. Comes out light golden brown. Just mix some Italian deessing with mayo. Dip the chicken in the mixture prior to grilling. I guarantee you won’t be disappointed.

Made a batch of Red Lobster Chedder rolls for lunch and beyond. I'd found a place on Amazon that was half of everyone else's price. A box makes six biscuits, you just add cheese, butter and water. I just have to get the reheating down.

I have a 5 quart Instant Pot pressure cooker, courtesy of Four Winds Casino, that I need to break out of the box and start using. It does everything but cook books.

I used my instant pot once before selling it for half of what I paid for it. Then I bought one that looked like it was not out of the box for $12 at an auction. It's sitting in my pantry.

Like both the slow cooker and Red Lobster biscuits, but have never ordered them. Looking forward to grilling and getting outside. Somebody twist my arm. I have no excuse not to drive down the street and catch my own Flounder that are running now. Just seem to be always too busy somehow. Flounder rollups with homemade crabmeat stuffing are the best.

Wife made stuffed peppers today Beyond awesome. I owe her a night out. Overnight tomorrow after a day of yard work and other errands during the day tomorrow. . I will slide a hundred into her nickel machine as well. She doesn’t know that part yet.
