The 80 to 85% rate is a "hold" calculation based on chips cashed out as a % of buy-ins. It's hard to find any table bet with a >15% house edge. A few of the side bets maybe.

I'm not sure it's true that MOST table games have 99% EV potential. Blackjack is the obvious one. Possibly craps, depending on how you consider the odds bet.

A few casino games can exceed 100% with benefits, but most gamblers are ill-equipped.

Nevada has probably the best video poker, although of course you have to be selective. Blackjack may be a better option elsewhere. Nevada's blackjack games aren't really anything special as far as I know.

The poker tables (live poker) can be profitable for a prepared player. Lately it may be more difficult to find full tables of 9. Short-handed tables may require more skill.
