As a new resident of SLC UT. this is our closest place to partake of casinos. Can anyone direct me to which casino has the biggest variety of these games? I homebase out of Nugget because they have a starbucks and it's quiet there.

Aside from the individual casino web sites, I use three main resources for stuff like this.
(1) The videopoker dot com directory. Nevada page:

(2) vpfree2 for specific pay table info.
(3) Nevada Gaming Control reports.

Click the "Nonrestricted Count Report" to see each casino's count of machines and table games.
