On the go? Retired or just busy or need a really good hold me over till you get to the casino? This is my favorite. Only about 260 calories total.
Round or oval clear pyrex dish. Spray lightly with Pam or smear with soft butter inside. Crack two eggs into the dish and scramble for a few seconds. Break up one slice of American cheese and place on top. Microwave on high about 45 seconds. Check it out and you will probably need another 30 seconds or so. Even with the turntable and cover, I usually put it back into a different part of the microwave. My microwave s 900 watt. Times will vary a bit. When done, flip over the dish onto your plate, add black or white pepper or whatever you like maybe Franks and enjoy. If you don’t mind the carbs or extra calories, enjoy on toast or a roll.
I vary from cheese to crumbled bacon or ham to diced tomato or even veggie. Sometimes even save the sodium in the cheese and just have the eggs. Really good and really fast.

Since I am home from the trip I am back on keto and that fits the bill perfectly. I think that will be my lunch tomorrow without the toast of course but will add some red peppers and broccoli. All those days of restaurant meals took its toll on my waistline.

Yum. Additions are almost unlimited. My brother made a veggie one today. Hes always on the go. Loved it. Especially no fighting with the skillet cleanup.

I was going to have Oatmeal, raisin, and apricot breakfast today, but opted to celebrate Sunday night’s Royal with a kinda anti diet sausage and egg treat. Same cooking instructions. The sausages were pre cooked. Back to healthy tomorrow. Probably be a while before the next Royal.

Good and fast winter breakfast. Quaker apple cinnamon Oatmeal, one little box of Sun Maid raisins, 2 cut up dried apricots, and slivered almonds from the foil packet that came with french green beens. I just nuked it a minute and half with some spring water. Usually use 1 percent milk. Good either way.
