Should the three have been saved in order for him to get the Aces with kicker? I know some people play that way.

Although terribly competetive, it's extremely risky eliminating one spot for the ace to show up. A's with kicker's are nice indeed but you have to land quad aces first.

In Triple Double Bonus you typically hold a kicer with 3 Aces. Not in DDB. Why? Simple... The huge payout for a kicker in TDB (same as a royal)
But in a contest like this, you might not want to play just for the best expected return because your opponent isn't the "house" it is another player. If you think there is a good chance you will need a kicker to beat your opponent (say you are late in the round and haven't hit a single quad) then it might be worth the risk. It is hard to say though. In the situation described above I might go for the kicker if I was having an otherwise bad round. Early in the round I would probably go for the Aces. But I don't think there is a "right" or "wrong" answer to this case.
