I think most non-pros do. They time themselves for two or three minutes and then project that over an hour. My friends and I used to play exactly 1,000 hands at $1 a hand to exploit a promotion in Vegas and only once did anyone finish in under an hour. Even then, I don't think he could have kept that pace up foran entire shift.
